KetoChow Sub-Reddit plus a video

A couple days ago somebody suggested that I create the /r/ketochow subreddit. Soudned like a good idea, so I did it. The community is pretty small still but larger than I thought it would be since I hadn’t linked it anywhere yet. So without further ado: https://www.reddit.com/r/ketochow/

Hit the big time (not really)

There’s a subreddit called /r/subredditsimulator where automated reddit robots can go around and “play”, generating random posts based on probability. Regular users can’t even post there. Yesterday I hit the big time because /u/keto_ss decided to tag me in a post

I am a bit more willpower than average, so when I ordered the sampler, /u/chrisbair told me to stop drinking water, from nausea to headaches to lethargy.

Don’t know why I would have done that =) Then again, I don’t think robots should drink water so I suppose it’s accurate. The bot has posted other fun stuff like

You have to take a new picture. I’ve tried them all and then reheat them in the oven for a minute or 2 and then gained back 100 lb. It’s easy to make with a food scale, so I am going for.

Keto Chow Pancake and Muffin batter (updated)

I finally got a chance to try out making Keto Chow pancakes yesterday, later in the day I made some muffins. Both turned out awesome. My wife liked the pancakes I made for breakfast but liked the muffins we had for dinner even more, especially when I brought out the cream cheese. My mom and dad were over and really liked both as well. I did the pancakes with “Rich Chocolate” and the muffins with “Chocolate Peanut Butter”

The recipe comes from redditor named “King_of_Camp” who added a couple things (baking powder, eggs) to keto chow and came up with an excellent batter that works for pancakes and also for muffins. I changed the original recipe based on my experience. Originally you had to whip the heavy cream but that seems to be an unnecessary step and I’ve eliminated it, makes it far easier to mix.

Use Keto Chow to make a nutritionally complete batter you can use for pancakes and muffins. Perfect for keto diets!

Instructions
  1. Add all the liquid ingredient to a bowl or a blender
  2. If you are using a blender, put the lid on and turn on the blender, you want to add the powder when it's already running to ensure even mixing without dry clumps
  3. Add the Keto Chow, sweetener and baking powder (and the optional coconut flour), mix well.
  4. You may need to add water until you get the consistency you like if you are doing pancakes.
  5. For pancakes heat up a griddle to 300 degrees, coat with oil and make pancakes. I used a 1/4 cup measuring cup and would make 2 pancakes with each scoop. Ended up with 48 pancakes (16 per person, per "meal").
  6. Cook until you can safely flip the pancakes. Unlike "normal" ones, the "waiting for the bubbles" trick probably won't work. I had to flip them when they were still pretty runny.
  7. Enjoy with some butter and sugar free maple syrup, I also tried Davinci sugar free raspberry syrup and peanut butter.
  8. For muffins, spoon out the batter into a lined cupcake/muffin tin. I used a large table spoon and heaping it was just about the fight amount to make 24 muffins (8 muffins per person, per "meal")
  9. Bake at 350 degrees for 20 minutes. When they come out they will be big and puffy but will quickly shrink down like a souffle
  10. Enjoy with some butter or cream cheese!
Recipe Notes

Instructions are for preparing a full day or 3 "meals" worth of Keto Chow. 2200 calories (you can change this by using less heavy cream), 105g of protein, 191g of fat, 22g of net carbohydrates. You can get far more detailed nutrition information here.

Fun Keto Chow stuff

Couch Potatoes (who made the “Fat bomb Cheesecake” recipe I did for thanksgiving) just did a video review of Keto Chow. They pronounced it “Definitely not bad” – which is about the same endorsement I got from an 11 year old.

In other news, I’m planning on trying the “Keto Chow pancakes” recipe another user posted on reddit. Good times.

100 days of Keto – starting January 4

My Graduation Pants are WAY too big

I was going through my closet last night and an old pair of pants fell out. They’re the Guess jeans I wore the last day of High School – way back in June 1995. Guys signed my year book, girls wrote on the pants. Yes I know, not the best idea. We’re all stupid in retrospect and I really need to throw them away now that they’ve apparently served their purpose (and before my kids read some of the stuff written on them).

Anyhow, I hadn’t looked at them in years and was surprised to find what size they were: 38. I must have carried the weight differently back then because I’m fairly certain I weighed about 220 at the time and 38 is the size pants I was wearing last year when I weighed 250. Decided I might as well try them on one last time and do a “bathroom mirror selfie”

Yep. WAY too big! I’m currently wearing 34 and even those are starting to get big. I doubt I’ll ever get to 30 but you never know.
