Cheap and easy "Simple Scrambles"
You may be familiar with the "Jimmy Dean Simply Scrambles", they're fantastic but rather expensive. The first time I opened one up I thought "hey, I can prepare this myself!" Here is our recipe that we like to use, though I typically do 3-5x as much at a time as is called for in the recipe. You can easily store these in the fridge or the freezer (and then the fridge to thaw) for later use.

Instructions
Pre-Prep of bags
  1. Cut up the bacon into smaller pieces
  2. Add the sausage (I'm tripling the recipe in these photos FYI)
  3. Cook it all together
  4. If you're a wimp (or rather if your kids can't handle the amount of fat), you can drain the meat.
  5. Let the meat cool, best to use the refrigerator so it doesn't get gross. Put about 1/2 cup of the meat mix into snack size bags
  6. Add about 1/4 cup of grated cheese to each bag
  7. Seal them, you can get out most of the air so they store smaller.
  8. Admire your work. You can put the smaller bags into a larger bag and store it in the fridge or even the freezer.
To use the bags to make breakfast
  1. Get the eggs, a large paper cup for hot liquids, a fork, and the meat mix.
  2. Crack 1-3 eggs into the cup. We typically use two eggs.
  3. See, eggs!
  4. Add the meat and cheese mixture.
  5. Stir it with a fork. Microwave (without the fork) for about 1 minute on high.
  6. Stir it again; you can use the same fork, don't be a sissy. Microwave again for 30-60 seconds.
  7. Check and see if it's done. If it's not: nuke it some more!
  8. If you're feeling awesome, make some of the Keto Chow Savory Biscuits and eat your breakfast in style!

This recipe came out so good with the snickerdoodle that my husband said it was one of the best muffins he has ever had. It's a great all-purpose recipe that will work with multiple flavors.

Instructions
  1. Preheat oven to 350 degrees
  2. Prepare a 12 cup muffin pan by oiling generously or lining with paper cupcake liners
  3. Place the eggs, oil, and sweetener in a large mixing bowl and whisk together.
  4. Add the keto chow, almond flour, flax seed, coconut flour, baking soda, cinnamon, and allspice and mix well.
  5. Then mix in the almond milk, vinegar and vanilla extract.
  6. Finally stir in the nuts or seeds.
  7. Allow the batter to rest 2-3 minutes. Then divide among the prepared muffin cups.
  8. Bake at 350 degrees for 25 minutes.
Recipe Notes

Serve warm with plenty of butter or nut butter and sugar-free jam.

Yield 12 muffins

Instructions
  1. Mix all ingredients with blender (I use an immersion blender)
  2. In a greased non stick pan (around 10” pan) over medium heat pour about 3 Tbsp of mixture into the middle and then pick up the pan and spread mixture to all sides (see video)
  3. let it cook until the edges start to lift a bit and it releases from pan when you use a spatula
  4. Flip and let cook for another minute.
Recipe Notes

Makes about 13-15 crepes. I would grease the pan every 3-4 crepes.

  7. Serve piping hot.

Keto Chow Eggnog Waffles with Cranberry Syrup
Cook time: 10-20 minutes depending on the size of your waffle iron.To me, nothing says cozy mornings at home with family, during the holidays like waffles and warm syrup. And It doesn’t get much more festive than eggnog waffles with homemade cranberry syrup. Even the most dedicated carb eater in your midst will enjoy these waffles so you might want to make a double batch. They freeze well so you can save any extras to reheat in a toaster oven or toaster if you still have one hanging around. Keep the cranberry syrup chunky and layer it between two waffles with sliced turkey and cheddar for amazing turkey melts!

Keto Chow Eggnog Waffles with Cranberry Syrup
Instructions
  1. Put the almond flour, keto chow and baking powder in a medium mixing bowl and whisk together.
  2. Add the eggs, milk, butter and vanilla extract and whisk well or blend with an immersion blender.
  3. Once the batter is mixed let it sit for five minutes then stir once more before cooking. Batter will be thick.
  4. While the batter sits preheat your waffle iron.
  5. When the waffle iron is hot oil it with cooking spray or butter
  6. Place about 1/4 cup of the batter in the center of the hot iron and spread out slightly.
  7. Close the lid and cook the waffle until it has set, looks golden and the waffle iron opens without resistance.
  8. If the batter gets too thick thin it by adding water or more nut milk a teaspoon at a time.
  9. Remove the waffle to a warm plate and continue until you have cooked all the batter.
  10. Serve the waffles with butter and warm cranberry syrup or your favorite sugar-free syrup
Recipe Notes

Note: You can also mix the batter in a blender quickly and easily and clean up will be a breeze. Just place all the ingredients in the blender and mix until they are fully combined. Allow the batter to sit five minutes and pour it directly from the blender pitcher into the hot waffle iron. Yield: approximately 4-5 waffles depending on the size of your waffle iron.
