Toasted rye or pumpernickel bread slathered with softened butter used to be one of my favorite things. This bread is evocative of a good home baked loaf and is very satisfying toasted, buttered and served alongside your favorite eggs. Equipment: 1.5 quart 5” x 9 loaf pan

Instructions
  1. Place the keto chow, almond flour, flax meal, coconut flour, baking soda, and cocoa powder in a large bowl and mix well.
  2. In a separate bowl beat together the almond milk, olive oil, and vinegar.
  3. Slowly pour the wet ingredients into the dry ingredients and stir together until everything is well mixed.
  4. Stir in the caraway seeds.
  5. Pour the batter into the greased loaf pan and spread out to even the top.
  6. Bake at 325 for approximately 50 minutes until the loaf is brown around the edges and springs back when touched in the center.
  7. Allow to cool before slicing.

Keto Chow Better than Bran Muffins
Instructions
  1. Preheat oven to 350 degrees
  2. Prepare a 12 cup muffin pan by oiling generously or lining with paper cupcake liners
  3. Place the eggs, oil, and sweetener in a large mixing bowl and whisk together.
  4. Add the keto chow, almond flour, flax seed, coconut flour, baking soda, cinnamon, and allspice and mix well.
  5. Then mix in the almond milk, vinegar and vanilla extract.
  6. Finally stir in the nuts or seeds.
  7. Allow the batter to rest 2-3 minutes. Then divide among the prepared muffin cups.
  8. Bake at 350 degrees for 25 minutes.
Recipe Notes

Serve warm with plenty of butter or nut butter and sugar-free jam.

Yield 12 muffins

  1. Preheat oven to 350 F
  2. Prepare a 12 cup muffin tin by oiling generously or lining with paper cupcake liners
  3. Combine the almond milk, vinegar and vanilla extract and set aside.
  4. In a separate bowl mix together the keto chow, almond flour, coconut flour, cocoa powder, and baking soda
  5. Cream butter until light and fluffy in an electric mixer, Beat in sweetener, Beat in eggs, one at a time.
  6. Beat in half the flour mixture
  7. Slowly mix in the liquid a little at a time so it doesn’t splash out of the bowl
  8. Beat in the remaining flour mixture
  9. Mix in the red food coloring. Add enough coloring to make the batter bright red. The amount needed will depend on what type of coloring you use.
  10. Divide the batter among the prepared muffin cups.
  11. Bake at 350 degrees until slightly firm to the touch and beginning to brown lightly around the edges. About 25-30 minutes
  12. All the cupcakes to cool completely before frosting

  1. Preheat oven to 350 degrees. Peel 2 large zucchini and remove both ends.
  2. Grate by hand or in a food processor.
  3. In a large mixing bowl combine wet ingredients (eggs and vanilla). In a medium/small mixing bowl combine dry ingredients (stevia powder, almond flour, cocoa powder, baking soda and salt). Combine by mixing.
  4. Sift dry mixture into wet ingredients.
  5. Whisk batter together, removing all clumps (the batter will be very dry, don't worry, this is normal).
  6. Add two cups of finely grated zucchini to the batter and stir (the moisture from the zucchini will create a good consistency but it takes time), keep mixing until zucchini is evenly incorporated into the batter.
  7. Fold in chocolate chips (I used sugar-free Hershey's).
  8. Spray 8x8 pan with non-stick spray or grease. Pour batter into pan and spread evenly with spatula.
  9. Bake for 30-35 minutes at 350 degrees
  10. Cool, cut into 9 even pieces, frost (find frosting recipe at ketochow.xyz) and serve.

These avocado brownies, originally from mypcoskitchen.com, delicious gluten-free recipes, are definitely keto friendly, but are they pallet friendly? If you enjoy the bitter dark chocolate taste and a dense, less-cakey consistency, these are the treat for you!

  1. Preheat the oven to 350 degrees. Remove pits from two avocados, peel, and place in food processor. Blend until smooth.
  2. Add vanilla, eggs, cocoa powder, stevia, and coconut oil to the food processor. Pulse until smooth.
  3. Remove 100g of chocolate from package (because I used an unsweetened baking chocolate, I had to add more sweetener to counteract the bitterness).
  4. Break into small pieces and microwave for 30 seconds on high.
  5. Remove from microwave, stir and repeat until chocolate is smooth (do not heat for intervals longer than 30 seconds or the chocolate will burn, and trust me burnt chocolate is the last thing you want your house to smell like).
  6. Add the melted chocolate to the food processor and pulse until combined with other ingredients. Add remaining dry ingredients and pulse until the batter is smooth with no lumps.
  7. Grease a small baking dish (I used a 8x10 pan) or line with parchment paper and spray with non-stick cooking spray. Evenly spread brownie batter into dish and bake for 35 minutes.
  8. Remove from oven and cool. Frost and serve (frosting recipe found on Ketochow.xyz under avocado frosting).
