Instructions
Cake
  1. Mix together (immersion blender works great) butter, sweeteners and the eggs.
  2. Add the ketochow, almond flour, baking powder, and cinnamon and blend again
  3. Add carrots and blend for the last time.
  4. Add batter to buttered pan or baking dish (see note)
  5. Bake on 350 for 30-35 minutes or until cake bounces back when you touch it.
Frosting
  1. Blend with immersion or whip together until thick and smooth
Recipe Notes

You can make this in basically any kind of pan but the baking time will vary. I used a 10 inch round pan and also a cupcake pan with papers. My cupcakes took half the time. Makes roughly 16 cupcakes You may use one kind of sweetener if you wish.

  1. Mix together dry ingredients.
  2. In separate bowl mix up eggs and add sweetener, almond milk and melted butter, preferably all room temp.
  3. Combine well and add dry ingredients and mix thoroughly.
  4. Add to greased 8x8 baking dish.
  5. Mix together streusel ingredients and sprinkle evenly over the top.
  6. Bake on 350 for 35-40 minutes.

Instructions
  1. Preheat oven to 350 degrees
  2. Prepare a 12 cup muffin pan by oiling generously or lining with paper cupcake liners
  3. Place the eggs, oil, and sweetener in a large mixing bowl and whisk together.
  4. Add the keto chow, almond flour, flax seed, coconut flour, baking soda, cinnamon, and allspice and mix well.
  5. Then mix in the almond milk, vinegar and vanilla extract.
  6. Finally stir in the nuts or seeds.
  7. Allow the batter to rest 2-3 minutes. Then divide among the prepared muffin cups.
  8. Bake at 350 degrees for 25 minutes.
Recipe Notes

Serve warm with plenty of butter or nut butter and sugar-free jam.

Yield 12 muffins

Instructions
  1. Blend Snickerdoodle Mixture together, an immersion blender works best for this.
  2. In greased 8x8 or 9x9 add the snickerdoodle mixture except for 1/4 cup.
  3. Add cream cheese mixture on top.
  4. Spoon dollops of remaining snickerdoodle dough on top and use knife to make swirl.
  5. Bake on 350 degrees for 30 minutes.
  6. Let cool and refrigerate for at least an hour, best if overnight.

Cranberries aren’t just for Thanksgiving. I love to use them all winter long. They are bright, beautiful, high in vitamin C and antioxidants and of course they are lower in sugar than most fruits. This recipe will yield enough syrup for a double batch of waffles or to save some to drizzle over your favorite keto friendly ice-cream or yogurt.

  1. Place all the ingredients in a medium sauce pan and bring to a boil over high heat.
  2. Reduce heat to medium and simmer the sauce until the cranberries burst and the sauce begins to thicken. This should take about 5- 10 minutes.
  3. When the sauce is cooked remove the cinnamon stick and allow it to cool slightly.
  4. Pour the sauce into a fine sieve placed over a mixing bowl and push it through with a spatula or the back of a large spoon. Continue working until all you have left in the strainer is skin and pulp and all the liquid is in the bowl.
  5. You should have a ruby red, glossy syrup.
Recipe Notes

Note: You can leave the sauce whole if you prefer and serve as is. It will be nice and chunky. Yield: approximately 2 cups of syrup
