  1. In a large mixing bowl blend the keto chow and heavy cream until smooth.
  2. Beat in the cream cheese.
  3. Then mix in the sweetener.
  4. Beat in the softened butter a few pieces at a time until the mixture is light, fluffy and smooth.
  5. Frost the cupcakes and decorate with raspberries.

  1. In a large mixing bowl, beat the cream cheese with an electric mixer on low speed until it is softened and has spread out in the bowl.
  2. Add the keto chow and heavy cream and beat on medium speed until they are fully mixed in.
  3. Add the butter and the sweetener; add the peppermint extract and food coloring now if using.
  4. Beat the mixture for about 30-45 seconds on low speed, then raise the speed to medium-high and whip until the mixture looks light and fluffy.
  5. Scoop out teaspoon sized balls onto a tray lined with waxed paper or parchment paper
  6. Or prepare an 8” X 6” or similar sized rectangular cake pan by greasing and lining with parchment paper cut to fit the bottom of the pan. Spread the mint mixture into the pan in an even layer.
  7. Chill in the coldest part of your refrigerator for at least 4 hours, preferably overnight. When it has set turn it out of the pan, remove the parchment paper and cut it into small squares.
  8. If it becomes too soft to work with place it in the freezer for a few minutes.
  9. To serve dust the pieces with confectioner’s sweetener or drizzle them with chocolate coating and chill until the chocolate is set.

  1. Melt the coconut oil and the chocolate together.
  2. You can melt them in a microwave safe bowl in the microwave or in the top of a double boiler set over gently simmering water.
  3. Stir the mixture to make sure it is mixed completely together.
  4. Drizzle the chocolate over the prepared mints.
  5. You can also use the chocolate coating to make molded mints by following the manufacturer’s directions for filled chocolates from your favorite candy mold.

  4. Then add the rest of the ingredients and blend until fully combined and completely smooth.
  5. Pour the mixture into the prepared pie pans and place the pans on a cookie sheet.
  6. Bake at 325 Degrees for 15-20 minutes. Until the tops are set but the pies are still slightly soft in the center.
Recipe Notes

Note: If you don’t have small pie pans you can use one 9-inch pie pan. Bake the pie for 25-30 minutes.
