  1. Preheat oven to 350 degrees
  2. Prepare a 12 cup muffin pan by oiling generously or lining with paper cupcake liners
  3. Place the eggs, oil, and sweetener in a large mixing bowl and whisk together.
  4. Add the keto chow, almond flour, flax seed, coconut flour, baking soda, cinnamon, and allspice and mix well.
  5. Then mix in the almond milk, vinegar and vanilla extract.
  6. Finally stir in the nuts or seeds.
  7. Allow the batter to rest 2-3 minutes. Then divide among the prepared muffin cups.
  8. Bake at 350 degrees for 25 minutes.
Recipe Notes

Serve warm with plenty of butter or nut butter and sugar-free jam.

Yield 12 muffins

  1. Preheat oven to 350 F
  2. Prepare a 12 cup muffin tin by oiling generously or lining with paper cupcake liners
  3. Combine the almond milk, vinegar and vanilla extract and set aside.
  4. In a separate bowl mix together the keto chow, almond flour, coconut flour, cocoa powder, and baking soda
  5. Cream butter until light and fluffy in an electric mixer, Beat in sweetener, Beat in eggs, one at a time.
  6. Beat in half the flour mixture
  7. Slowly mix in the liquid a little at a time so it doesn’t splash out of the bowl
  8. Beat in the remaining flour mixture
  9. Mix in the red food coloring. Add enough coloring to make the batter bright red. The amount needed will depend on what type of coloring you use.
  10. Divide the batter among the prepared muffin cups.
  11. Bake at 350 degrees until slightly firm to the touch and beginning to brown lightly around the edges. About 25-30 minutes
  12. All the cupcakes to cool completely before frosting

Snickerdoodle Mixture - Mix everything together and reserve 1/4 cup
Cheesecake Mixture
Instructions
  1. Blend Snickerdoodle Mixture together, an immersion blender works best for this.
  2. In greased 8x8 or 9x9 add the snickerdoodle mixture except for 1/4 cup.
  3. Add cream cheese mixture on top.
  4. Spoon dollops of remaining snickerdoodle dough on top and use knife to make swirl.
  5. Bake on 350 degrees for 30 minutes.
  6. Let cool and refrigerate for at least an hour, best if overnight.

  1. Cream coconut oil or butter with mixer
  2. Add erythritol and eggs and mix well
  3. Add baking powder and ketochow, mix until well combined.
  4. Drop balls into erythritol/cinnamon mixture and roll until covered.
  5. Add to parchment paper and bake at 350 for about 12-15 minutes

  1. Mash avocado with mixer
  2. Add eggs and sweetener and combine.
  3. Add melted butter and vanilla and combine.
  4. Add the dry ingredients and mix thoroughly.
  5. Split into two greased mini loaf pans (3x5 1/2)
  6. Bake at 350 degrees for 35-40 minutes.
Recipe Notes

Notes: this does sink a little when it’s cooling, be sure it’s done before you pull it out of the oven. Let it cool completely before slicing. You can also substitute almond milk for butter if you prefer.
