I have a confession to make. I’ve been churning this ice cream frosty every night for a week to make it just right for you when really it was perfect the first time!! 🤣 and if you’re thinking dang that seems like a lot of work...as long as you have an ice cream maker (I love my kitchenaid one!) this recipe is a breeze!
Instructions
  1. Mix all ingredients with blender until smooth and thick.
  2. You can refrigerate for a couple of days or churn it right away.
  3. Pour into ice cream bowl and churn for 15 minutes.
  4. You can freeze after churning for up to 30 minutes to harden or eat right away.

Ring around the Root Beer Float
Creamy, cool and elegant this old-fashioned gelatin brings back memories of root beer floats on hot summer days. The carbonated water lightens the gelatin and adds a little sparkle to the root beer. Try cherry, vanilla or even lime soda water to add another layer of flavor to this creamy delight. Equipment: Ring Mold

Instructions
  1. Place the cold water in a small saucepan and sprinkle the gelatin over the surface.
  2. Allow the gelatin to soften for a minute or two
  3. Place the pan over medium-low heat and heat while stirring until all the gelatin has dissolved and the mixture is hot but not boiling. About 190-200 degrees.
  4. Add the sweetener and stir until completely dissolved
  5. Set the gelatin mixture aside to cool slightly
  6. Whisk or blend the keto chow, heavy cream and one cup of the carbonated water together until there are no lumps remaining. Mix in the gelatin.
  7. Gently stir in the rest of the carbonated water being careful to keep as much carbonation in it as possible. Pour the mixture into your ring mold or an attractive serving bowl.
  8. Cover and refrigerate overnight.
  9. To serve, unmold onto a platter or serve in the bowl garnished with fresh whipped cream and berries if desired.

Instructions
  1. Mix 1/2 cup water and gelatin in stand mixer bowl and set aside.
  2. Butter a 9x13 glass baking dish. Can add powdered swerve if desired and set aside.
  3. Heat 3/4 cup water, erythritol, and keto chow until it’s bubbling and well combined, stirring continuously.
  4. Add keto chow mixture to gelatin and start with whip attachment on low for 5 minutes.
  5. Be careful because it is very hot.
  6. After five minutes increase speed to high until its fluffy and doubled in size.
  7. Add to buttered baking dish and let cool before cutting.

Instructions
  1. Mix up your Keto Chow as normal, you may want to use less water than normal. My creamsicles forms each hold 4 oz so I made mine to be around 16 oz to make 4 creamsicles per serving
  2. Pour into form, add the sticks
  3. Freeze!
  4. dip the frozen forms in warm water to loosen, if you're not eating them immediately, put them in a bag and freeze again
  5. Enjoy!
