Bird of Paradise Cake

Bird of Paradise Cake

This cake is inspired by the classic Hummingbird Cake. Since it has delicious flavor of bananas and pineapple without the sugar, I'm calling it Bird of Paradise Cake. It gets its delicious sunny flavors from Banana Keto Chow, pineapple extract, and shredded coconut.

Ingredients

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare the cake pans by greasing them well and lining the bottom of the pans with 9" rounds of parchment paper. Lightly oil the parchment paper, too.
  • Toast the coconut and pecans on an ungreased cookie sheet or cake pan in the middle rack of the oven. Stir them occasionally while they toast and remove them from the oven when they smell fragrant and the coconut is beginning to look golden brown. It should take about five to ten minutes. Set them aside to cool while you make the cake.
  • In a large mixing bowl, combine Banana Keto Chow, almond flour, baking powder, and cinnamon. Whisk together.
  • In a separate bowl, mix together the eggs, coconut milk, sweetener, avocado oil, vanilla extract, and pineapple extract. Whisk until fully combined.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Then gently fold in the coconut and pecans.
  • Divide the cake batter evenly between the two prepared cake pans.
  • Spread it and smooth it evenly.
  • Place in the middle rack of the preheated oven to bake.
  • The cakes are done when they spring back when gently touched in the center and a skewer comes out clean. It should take about 20-25 minutes.
  • Set on a rack to cool. When the cakes have cooled for about 10 minutes, gently remove them from the cake pans and carefully remove the parchment paper. Set them on the rack to cool completely.
  • When they are cool, frost them with the Banana, Pineapple, Sour Cream Icing.

Banana Peanut Butter

Banana Peanut Butter

I’m gonna be real honest right now and let you know I HATE spending a ton of money on keto treats for myself but I have an insane sweet tooth. I’ve been wanting the banana peanut butter but I just can’t bring myself to spend over $10 on a jar. I decided to make my own and it did not disappoint!

Ingredients

  • 1 cup dry roasted salted peanuts
  • 1/4 cup Banana Keto Chow
  • 1 Tbsp erythritol or another sweetener like allulose
  • 2 Tbsp softened butter

Instructions

  • Gather ingredients.
    Banana Peanut Butter
  • Pulse peanuts on the highest setting for 45 seconds.
    Banana Peanut Butter
  • It should be a peanut butter consistency.
  • Add butter, erythritol and Keto Chow, and pulse until blended.

Notes

You may add more Keto Chow for more banana flavor, but I’m not sure how it will change the consistency. If you like things sweeter add a touch more erythritol. If you don’t like things salty, use unsalted peanuts and unsalted butter.

Luscious, Low Carb Lemon Snap Keto Chow Banana Pudding

Luscious, Low Carb Lemon Snap Keto Banana Pudding

Like the southern classic this dessert features creamy pudding and crisp cookies in impressive layers. In my keto chow version banana pudding takes the place of the bananas, and lemon-snap cookies give the pudding a refreshing zing. Topped with a layer of vanilla pudding and decorated with whipped cream it’s a light, luscious dessert that’s perfect for any spring gathering or Sunday brunch.

Ingredients

Instructions

  • Place 2 cups of the heavy whipping cream in a large mixing bowl, sprinkle the banana keto chow and 1/4 cup of the sweetener over the cream and beat until it is completely mixed, has doubled in volume and has a creamy, pudding consistency. If it is too thick, thin it by adding almond milk a tablespoon at a time until it is spreadable.
  • In a separate bowl repeat the process with the other two cups of heavy cream, the vanilla keto chow, the other 1/4 cup of sweetener and the teaspoon of vanilla extract.
  • Now you have a bowl of banana pudding and a bowl of vanilla pudding.
  • Line the bottom of an attractive bowl or trifle dish with a layer of the lemon snap cookies and spread the banana pudding over the cookies
  • Top the banana pudding with another layer of lemon cookies.
  • Spread the vanilla pudding over that layer.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • When ready to serve, decorate with whipped cream, lemon curls and mint leaves.

Chocolate Dipped Banana Peanut Butter Keto Pops

Chocolate Dipped Banana Peanut Butter Keto Pops

When I was a kid, peanut butter and bananas was one of my favorite snacks. Well, I don’t eat bananas these days but I still love the flavor combination and when you add chocolate you’ve got an incredibly delicious treat that won’t throw you off your keto game. These pops are fun and delicious especially if you find yourself some banana shaped popsicle molds (https://amzn.to/2Yaqh1P) to freeze them in. But if you don’t feel like taking the time to freeze them, the mixture also happens to make the most delicious banana-peanut butter smoothie you can imagine.
