Recovering, Editing, Experimenting, Answering… 😉

We finished up the Keto Salt Lake show on Saturday. That was a lot of work but insanely awesome, I have a bunch of pictures I need to post when I get the time. Lately, I’ve been swamped with a few things:

  • Editing the recordings of the Keto Salt Lake presentations.
  • Answering the (thousands) of questions on the Facebook advertisement with the new video.
  • Doing experiments with different ways of mixing Keto Chow.

At Keto Salt Lake we had two different cameras running that were recording the presentations in UHD4K (3840×2160@29.97p), I also had an audio recorder plugged directly into the microphone feed so I could get a clean recording of the presentations. In all, approximately 34 hours of video (17 on each camera) were recorded. It ended up being 1.07 TeraBytes of data! I had to put it on my spinning hard drive because the SSD is only 953GB, it’s like living in the past! =)

I have the editing for Friday completely finished and I’m rolling right along with getting at least 2 presentations done and uploaded to YouTube each day. All of them go into the 2019 Low Carb Salt Lake Recordings playlist so they are easy to find and watch.

The commercial has been an astounding success. It’s been pretty frantic around here shipping out orders and answering questions. I see every question from someone as an opportunity: it means they want to know more and put forth the effort to ask. Even if they have the same question that I’ve answered a few dozen times, that means they want to know (and I can use my answer templates for a bunch of them =). The coolest thing is: for every “keto is dumb, you suck, die in a fire” or “sucralose will make your hair turn blue and isn’t as good as eating twigs and bark” comment, we get several dozen comments from people that think the ad is funny, are interested in trying it, and are excited that there’s something that can help them on their keto journey. We are also getting a lot of our customers that answer people’s questions for us. Seriously: that’s super cool! One person asked how many bots we have on there making it look like people like the product. I replied that you only have to do stuff like that when you’re trying to trick people because the product sucks. We don’t “astroturf” (no need) and the product is awesome.

I also had a conversation with a certain person that’s noted for their work treating Alzheimer’s patients with keto, coconut oil, MCT oil, and exogenous ketones. I asked if they see a marked improvement with people supplementing coconut oil – she said they do indeed see a substantial improvement in most cases. I decided to try applying the technique for mixing Keto Chow with butter and use it to mix regular Costco coconut oil (which was quite solid in my cupboard). I used 50g coconut oil (melted) and mixed it up with Keto Chow and warm water. Let it chill in the fridge and there is no separation (see the image at the top of this post, the bottle on the left with the grey lid was refrigerated overnight). It does have a pronounced coconut flavor that I think goes well with regular chocolate.

I also tried mixing up a full meal of Keto Chow with unsalted butter with a LOT less water than typical – the finished volume was 14oz (about 380ml). It was quite thick but still very pleasant – makes it possible to fit in a far smaller container if necessary. That’s the bottle on the right side with the blue lid.

Results and conclusions from 6 week fat experiment (42 days of Keto Chow)

This entry is part 44 of 44 in the series 42 days of Keto Chow Experiment

I have my analysis done on the data from my 6-week experiment doing Keto Chow for all my meals and swapping out different types of fats to see how they impact my lipid panels. It’s all chronicled over on the page about the experiment, along with an extensive array of graphs and other fun stuff.

I also proved that at least in me: eating 2000 calories a day of mostly fat with some protein I’ll lose weight. Switch that to 2000 calories of mostly carbohydrates with a little fat and the same amount of protein (and again, the same 2000 calories), I will gain weight.

Fun stuff!

42 Days of Keto Chow – Day 41, blood tests back

This entry is part 41 of 44 in the series 42 days of Keto Chow Experiment

I was watching a video by Dave Feldman (where he had to keep pausing to eat skittles, it was great) and he talked about fructose malabsorption causing him digestive issues. I don’t think I have that problem which is why I haven’t had really bad problems during this phase. Again it seems that I dodged another bullet for which I’m grateful. I’m still anxious to get back into keto. Yesterday I bought the brisket and ribs for the meetup, they’re currently in the Sous-Vide cooking for a few days and I’ll finish them in the smoker on Saturday.

Got my Coconut Oil week blood tests back – REALLY interesting stuff. I’ve entered the data into the spreadsheet (check it out!) but here are some of the highlights:

  • I hit an all-time low LDL-P (particle count): 567. It’s down 43% from 996 the week before. 👍 (you’re looking for under 1000)
  • All time low LDL-C: 56, down from 78. 👍
  • I brought back down my triglycerides from 148 to 103 👍 (you want this below 100)
  • My HDL-C went WAY up (52% to be exact): from 40 to 61 👍👍👍 (you want this as high as possible)
  • A1c is still steady at 4.8 👍
  • Fasting insulin went WAY up, from 5.2 to 8.4 – the highest I’ve recorded so far. 👎

This test was the first time I saw a departure from the previous inversion pattern of LDL-C and Triglycerides which would go up and down opposite of each other. I don’t know if it was the high amount of MCTs in the coconut oil or what. Regardless, I can handily say that consuming almost entirely saturated fat for a week made my blood tests look AMAZING.

Here are some of the graphs from the spreadsheet:

OK, here we go!

You can view my glucose tests as I take them on the “Sugar” tab of the spreadsheet here.

42 Days of Keto Chow – Day 35, last day of coconut oil, macadamia nut oil results back

This entry is part 35 of 44 in the series 42 days of Keto Chow Experiment

OK, I can do this… it’s the last day. I thought I was doing better with the Liquid Coconut Oil – until this morning. I was woken up at 2 and didn’t get back to sleep until 3:30 or so. I’m really happy that I installed a bidet in that bathroom. Why is this happening? I have a couple theories:

  • Still might be a stomach flu, I’m not ruling that out.
  • The sheer amount of MCTs in the carrington farms liquid coconut oil (about 33-34ml per shake) is about as much as I used to have in an entire day back before I started the experiment, multiply that by 3 and it’s rather serious. At least it’s fewer than the 190+ ml I started with last Friday.
  • The aforementioned MCT builds up or something? dunno but it was pretty bad.

Anyhow, tomorrow starts carb week. I’m actually having a bit of trouble finding a store that sells the bags of skittles I want. Costco only has giant bags, Sams-Club has vending machine packages of 50 (I need 20) and Walmart only has larger “share size” ones. I’ll try a local grocery store later today. This is nearly as bad as when I had to go to 4 stores to find a Runts banana to use in the product pictures. I’m planning on testing my glucose a bunch of times before and after I eat the sugar tomorrow, and I’ll likely do a live feed on a few of the social platforms. Wish me luck!

Last thing: I got back the blood work from my week of Macadamia Nut oil (high in monounsaturated fats) – it was a good enough result I called Dave Feldman and got to take up 22 minutes of his valuable time talking about it. You can view the results here for yourself (column Q). The short version is: it looks like my triglycerides respond to monounsaturated fats. Be sure to check out the “Chris Charts” tab at the bottom for easier to understand charts. It has all my tests plotted out nicely. Of note is the “Lipids 1” graph:

Avocado oil is quite high in MUFAs, Macadamia is higher. It’s also interesting to see Triglycerides and LDL-C running on an inversion pattern: one goes up, the other goes down in lock-step. The interesting thing about all this is it’s only happening to me in my n=4 experiment:

I’m the yellow line.

42 Days of Keto Chow – Day 34: on the ByteSized Podcast

This entry is part 34 of 44 in the series 42 days of Keto Chow Experiment

Woke up with a dehydration headache today, some water and ibuprofen took care of that. My gut is feeling much better, just in time for me to royally mess things up! =) Today is my second-to-last day of doing the liquid coconut oil. That means I have fewer than 48 hours before I eat carbs for science (and will likely feel like crap). In case you missed yesterday’s post, I’m going to be using skittles, sprite, and some M&Ms in addition to the dextrose to hit my 2000 calories for that week. And in case you’re wondering why the crap I’m doing all this, the original plan is laid out on this page.

Yesterday I was a guest on an episode of the ByteSized podcast and today it went up. I tried to keep it really short and didn’t ramble as much as I could =) Anyhow, please check it out!

42 Days of Keto Chow – Day 33 – finalized plans for “carb week”

This entry is part 33 of 44 in the series 42 days of Keto Chow Experiment

Based on the way I’ve been feeling the last few days I think I was “lucky” enough to have a run-in with the stomach flu at the same time I started the liquid coconut oil. Anyhow, I am feeling better today, likely in no small part from me doing the Savory Chicken Soup flavor of Keto Chow for breakfast and lunch.

I mixed up the 191g of dextrose I was planning on using for each meal next week… yeah, it was a LOT, so much that it wouldn’t even dissolve in the water and it was WAY too sweet. So I’m going to take a page out of Dave Feldman’s book and use some candy. I spent a bunch of time at the 7-11 across the street and ultimately decided that I’m going to use skittles, sprite, unsweetened almond milk, and a daily bag of M&Ms. It’s funny to me that using dextrose straight is unpalatable but put it in soda and candy and it’s just fine.

  • Why candy and Sprite? Same reason I’m using dextrose: pure carbs with no other nutrients. My other nutrition is covered by Keto Chow, I’m just looking for calories (in this case from carbs).
  • Why the Almond Milk? to make the Keto Chow taste better in the absence of heavy cream.
  • Why the M&Ms? to break things up a bit but mostly to add some fat, otherwise my fat intake is excessively low and I might start to get weird effects. I’ll be hitting 16% fat which is about right per the AHA and ADA recommendations.

Here’s what each day should look like:

42 Days of Keto Chow – Day 30, “fun” with coconut oil (actually MCT oil)

This entry is part 30 of 44 in the series 42 days of Keto Chow Experiment

So yesterday was my first day doing Coconut Oil, the package of the one I was using said “93% MCTs” so I should have seen this coming. About 20 minutes after I drank my first one I felt a bit weird and dizzy… and ran to the bathroom. Second One a few hours later was kinda the same story. The third one last night I felt really dizzy, so much so that I had to sit on the sofa instead of playing Munchkin which made Levi really sad.

So today I’m switching to a different liquid coconut oil: Carrington Farms. I’ve used it in the past and didn’t have any gastrointestinal issues. I’m hoping that it works well. I ran to my local “Walmart Neighborhood Market” this morning not knowing if they would have it, turns out they had 3 different brands of liquid coconut oil! That was unexpected. Anyhow, if this doesn’t work I’ll switch to using less coconut oil and some heavy cream since this week is all about saturated fat.

42 Days of Keto Chow – Day 29, starting coconut oil!

This entry is part 29 of 44 in the series 42 days of Keto Chow Experiment

OK, turns out liquid coconut oil tastes pretty good. That’s a relief! So I’ll be using it as anticipated for this week. I got a blood test this morning to cap off the week of macadamia nut oil. Unlike previous weeks, there were few people there and no hint of civil unrest =)

Last night I discovered I was late to a Cub Scout Blue and Gold Banquet for my youngest son. It was nice to simply grab the final blender bottle of macadamia Keto Chow and run. They had taco salad and nachos, I could have done keto with the food there but didn’t need to as I was packing my own =)

In unrelated news, this morning there was a facebook post by a bakery a few minutes South of here:

KETO in the BAKERY! As promised, today we feature Lemon Curd Cheesecake Trifle and Chocolate Salted Caramel Cheesecake. Sugar free, less than 4 net carbs. Naturally gluten free. We will launch new products every week if demand is high. It’s up to you people!! Spread the word! #keto #ketobaker #glutenfree #sugarfree #ketorocks #healthylife #lehibakery #sugarhighconfections

I talked to the owner of the bakery (who is on a keto diet). They currently do the lemon curd trifle and salted caramel cheesecake and will be coming out with cookies and cupcakes soon. The sweetener used is Truvia (Erythritol). “The cheesecake is simply cream cheese, heavy cream and Truvia. The almond short crust is almond flour and butter with a bit a sea salt. The lemon curd is lemon juice, egg yolks and Truvia. The caramel sauce is just caramelized Truvia” 4 net carbs for the lemon, 2 for the cheesecake. I won’t be eating any of it anytime soon but my kids are going to love it!

It’s finally happened: we’re doing advertising for realsies

We’ve had a few ads here and there on Facebook, Instagram, and Reddit. We’ve done booths at Keto Con and will be at Breckenridge 2018, plus an appearance at the HVMN get together in San Francisco in a few weeks. Today our ad on the Livin La Vida Low Carb show went live. Best part: I totally got “jimmylovesketo.com”

On a side note, I have 3 suckers subjects that are going to be repeating part of my earlier experiment involving living on just Keto Chow, this time for 3 weeks but importantly, they’ll be doing a week of Keto Chow with Avocado Oil and we’ll see how that affects their triglycerides. I am going to be starting my fatty acids n=1 experiment this Friday with the final test just before Breckenridge, should be cool!
