Pistachio White Chocolate Chunk Ice Cream

Creamy pistachio ice cream studded with chunks of toasted nuts wrapped in white chocolate is going to be your new summer favorite. Ripening the mixture in the freezer for only four hours after churning it, results in a soft, creamy gelato like texture. If it freezes longer it will be just as delicious but may need to sit at room temperature for a few minutes to return to the delightful consistency. Toasted pistachios coated in white chocolate really make this ice cream special, but pistachios are higher in carbs than some nuts so feel free to replace them with almonds, walnuts, or macadamia nuts to lower the carb count on this luscious frozen dessert.

Equipment

Ingredients

  • 2 oz shelled pistachios
  • 2 oz sugar-free white chocolate chips
  • 3 oz granulated allulose
  • 1 cup unsweetened almond milk (8 oz)
  • 2 scoops Pistachio Keto Chow
  • 2 cups heavy cream (16 oz)
  • 1/2 tsp pistachio extract (optional)

Instructions

  • Toast the nuts by placing them in a dry skillet set over medium-low heat and cooking them until they begin to look lightly browned and smell toasty. This should only take about five minutes. Keep a close eye on them as they can burn quickly.
  • When they are done move them to a tray lined with parchment paper to cool.
  • Meanwhile, place the white chocolate chips in a microwave safe bowl and microwave in 15 second bursts, until melted enough to stir smooth.
  • Mix the toasted nuts into the white chocolate and spread the mixture out on the parchment paper covered tray. Spread them into one even layer. Place the tray in the freezer to set.
  • Place the allulose, almond milk, and keto chow in a blender and blend until the allulose is dissolved, and the keto chow is completely mixed.
  • Add the heavy cream, and the pistachio extract if using, and blend again briefly just until everything is combined, and frothy. If you blend too long you will turn the cream into butter.
  • The mixture should still be cold, transfer to your ice cream machine and churn according to the manufacturer's directions. It takes about 20 minutes to churn ice cream in my machine.
  • While the ice cream is churning, break the chocolate covered nuts into individual pieces.
  • When it’s ready, it will have increased in volume and will be very thick, but still spoon-able. However, every machine is different so please consult the manufacturer’s directions for your machine.
  • If it is possible add the nuts before you turn off the machine, allowing the machine to mix them into the ice cream. If you can’t add the nuts to your machine while mixing, fold them into the ice cream when you transfer it to the container.
  • Transfer the ice cream to a container and freeze for four hours, until frozen but still soft enough to scoop.
  • Keep ice cream stored in an airtight container in the freezer for up to two weeks for best results.

I’ve been churning this ice cream frosty every night for a week to make it just right for you when really it was perfect the first time!! 🤣 And if you’re thinking, "Dang that seems like a lot of work!"...as long as you have an ice cream maker (I love my KitchenAid one!), this recipe is a breeze!

Ingredients

  • 4 oz Heavy Cream

  • 1 scoop/packet Chocolate Keto Chow (48 grams) or other flavor of your choice
  • 1 Tbsp cocoa powder
  • 1 Tbsp powdered Swerve

Instructions

  • Mix all ingredients with a blender until smooth and thick.
  • You can refrigerate for a couple of days or churn it right away.
  • Pour into ice cream bowl and churn for 15 minutes.
  • You can freeze after churning for up to 30 minutes to harden, or eat right away.

Salted Caramel Semifreddo with Candied Almonds

Semifreddo means half frozen in Italian, it's a frozen mousse that is light and luscious. It's a perfect dessert when you want something cold and creamy but you don't want to lug out the ice cream maker.

Ingredients

Instructions

  • Prepare an ice cream mold or loaf pan by lining with plastic wrap or waxed paper.
  • With an electric mixer, beat the cream until it starts to thicken. When it begins to look like melted ice cream, slowly add the Keto Chow and confectioner’s sweetener.
  • Continue to whip the cream until it holds stiff peaks.
  • Fold in the candied almonds.
  • In a separate bowl, beat the egg whites until they are stiff but not dry. Be sure the bowl and beaters are very clean before adding the whites and there isn’t even a drop of egg yolk in them. Wiping the bowl and the beaters down with white vinegar will assist in successfully whipping the egg whites.
  • Gently fold the whipped egg whites into the Keto Chow mixture.
  • Spoon the mixture into the prepared ice cream mold or loaf pan and wrap tightly with plastic wrap.
  • Freeze overnight.
  • To serve unmold the loaf onto a serving dish, remove the plastic wrap or wax paper and slice to serve.
  • Garnish with reserved almonds, fresh berries and whipped cream, if desired.
