I have a confession to make. I’ve been churning this ice cream frosty every night for a week to make it just right for you when really it was perfect the first time!! 🤣 and if you’re thinking dang that seems like a lot of work...as long as you have an ice cream maker (I love my kitchenaid one!) this recipe is a breeze!

Instructions

  • Mix all ingredients with blender until smooth and thick.
  • You can refrigerate for a couple of days or churn it right away.
  • Pour into ice cream bowl and churn for 15 minutes.
  • You can freeze after churning for up to 30 minutes to harden or eat right away.

Keto Chow Salted Caramel Semifreddo with Candied Almonds

Semifreddo means half frozen in Italian, it's a frozen mousse that is light and luscious. It's a perfect dessert when you want something cold and creamy but you don't want to lug out the ice cream maker.

Ingredients

  • Prepare an Ice cream mold or loaf pan by lining with plastic wrap or waxed paper
  • With an electric mixer, beat the cream until it starts to thicken, when it begins to look like melted ice cream slowly add the keto chow and confectioner’s sweetener
  • Continue to whip the cream until it holds stiff peaks.
  • Fold in the candied almonds
  • In a separate bowl beat the egg whites until they are stiff but not dry (be sure the bowl and beaters are very clean and there isn’t even a drop of egg yolk in the whites. Wiping the bowl and the beaters down with white vinegar will assist in successfully whipping the egg whites)
  • Gently fold the whipped egg whites into keto chow mixture.
  • Spoon the mixture into the prepared ice cream mold or loaf pan and wrap tightly with plastic wrap.
  • Freeze overnight.
  • To serve unmold the loaf onto a serving dish, remove the plastic wrap or wax paper and slice to serve.
  • Garnish with reserved almonds, fresh berries and whipped cream if desired.
