Semifreddo means half frozen in Italian, it's a frozen mousse that is light and luscious. It's a perfect dessert when you want something cold and creamy but you don't want to lug out the ice cream maker.

Prepare an ice cream mold or loaf pan by lining with plastic wrap or waxed paper.
With an electric mixer, beat the cream until it starts to thicken. When it begins to look like melted ice cream, slowly add the Keto Chow and confectioner’s sweetener.
Continue to whip the cream until it holds stiff peaks.
Fold in the candied almonds.
In a separate bowl, beat the egg whites until they are stiff but not dry. Be sure the bowl and beaters are very clean before adding the whites and there isn’t even a drop of egg yolk in them. Wiping the bowl and the beaters down with white vinegar will assist in successfully whipping the egg whites.
Gently fold the whipped egg whites into the Keto Chow mixture.
Spoon the mixture into the prepared ice cream mold or loaf pan and wrap tightly with plastic wrap.
To serve unmold the loaf onto a serving dish, remove the plastic wrap or wax paper and slice to serve.
Garnish with reserved almonds, fresh berries and whipped cream, if desired.
