Keto Chicken Tortilla Soup

This keto chicken tortilla soup is easy to make and super filling. Make in advance for meal prep or serve to the whole family.

- 4cupsbone broth
- 8oz.celeryroughly chopped
- 8oz.cauliflowerroughly chopped
- 4oz.tomato paste
- 1servingCreamy Tomato Basil Keto Chow
- 1tsp.chopped fresh dill
- 0.75tsp.sea salt
- ground black pepperto taste
- 1tsp.ground cumin
- 2oz.butter
- 1lb.cooked chickenshredded
- 2oz.keto tortilla strips*
Place the bone broth, celery, cauliflower, and tomato paste in a pan, bring to a boil and simmer for about 15 minutes until the veggies are soft.
Transfer the bone broth and veggies to a blender and blend on high until very smooth.
Add the Keto Chow, dill, sea salt, pepper, ground cumin, and butter, and blend until completely mixed and smooth.
Pour the mixture back into the pan. Add the cooked, shredded chicken.
Warm the soup through, ladle into bowls, and add 1/2 oz. of keto tortilla strips to each bowl.
*If you cannot find keto or low carb tortilla strips, take 2 8” corn tortillas and cut them into thin strips.
