Master’s in Horticulture. Pro gardener. The first thesis idea I pitched was a manifesto about irresponsible plant ownership. (I have Feelings™ about that. Don’t get me started.) My favorite thing in the world is to sit down in the garden after a day of weeding, planting, watering, etc. with some fruit and cream at dusk. Perfection.

What is “Keto”?

If carbohydrates are available, your body will burn that first. If carbs are not available, your body will burn fat & your fat stores! “Keto” (scientifically known as “Nutritional Ketosis” but usually referred to as just “keto” or a “ketogenic diet”) involves restricting your diet to moderate protein, very low carbohydrates and high fat. It’s similar to the the Atkins diet, but with more solid science. When you are consuming enough protein to keep muscles happy, restricting carbohydrates as low as possible and making up the rest of your calories in fat, your body switches into a fat burning mode. Your liver will begin converting fats into energy molecules known technically as “ketone bodies” – which is where the name of the diet comes from. People end up with MORE energy and vitality on a ketogenic diet. Muscle cells are finally gaining energy instead of all the fuel getting stored away in fat cells because of insulin, specifically insulin resistance.

I added to the standard keto mixture vanilla, and strawberry extract and a tsp of bloomed gelatin and blended it. Put it in ice cream maker and at the end of freeze added in some chopped strawberries. You can work with any flavor to customize it. The gelatin added an extra layer of creaminess.

I tried every flavor and even though I love chocolate I have to say the strawberry was the best. Mixing with heavy cream was like having a strawberry milk shake with ice cream. It was just as thick and creamy and good!

I recently enjoyed Keto Chow in Strawberry, and it was a pure treat! The flavor was pure strawberry, NOT random sweet berry. As it set in the fridge, the flavor deepend and intensified. By the following morning, it was akin to eating a magnificent strawberry custard!
